Super Bowl Sunday 

February 5, 2012


In place of Sunday Supper this week, we have a specially priced ($5-7) "small plate" menu available all night in honor of the Super Bowl. Hopefully the game has as many suprises as our menu! 

 

Our game-day inspired menu begins with a not-so-average 7 layer dip with fresh tortilla chips. I'll let you in on 3 of the layers right now - smoked and shredded beef, duck fat refried beans and freshly prepared chili con queso. Need I continue?

 

Next up - double-smoked Zenner's pork links. We're serving them with our house made bbq sauce and yellow mustard potato salad. Who doesn't love a couple dozen bbq smokies?

 

The Super Bowl is a great chance to test our new low-temp smoker. We're doing a 6 hour Carolina-style pulled pork sandwich with spicy slaw. I'm already having dreams about the smoked pork possibilities!

 

Last but not least, what's the Super Bowl without wings! We're having a "battle of the wings" this Sunday.

 

Jeremy's crispy chicken wings will take on Jeff's fire-belly wings in a 'flight' to the finish! Winner gets bragging rights until next Super Bowl so come in and enjoy some great food, drinks and the game!

Cracklin' Pork Shank with Mustard Braised Cabbage, Goats Cheese Spaetzle and German Potato Salad

 

What is cracklin' pork shank you ask? Only one of the most delicious and decadent foods on Earth! First we braise Carlton Farms pork shanks until they're oh-so tender. Next - they're deep fried, leaving the shank crisp on the outside, tender and flavorful on the inside. Think pork shank confit! 

  
We're giving this supper a German spin by adding goat's cheese spaetzle and mustard braised cabbage alongside. This week's first course is a German potato salad with deviled eggs.

Porcini Crusted Beef Medallions with Wood Oven Cauliflower Gratin and Loaded Baked Potato

 

 

The weather over the last week has us thinking it's time for a hearty supper for all our steak lovers out there! Our last steak night - featured grilled hanger steak which is one of the most popular cuts we've served!

 

This Sunday we're presenting a different style steak which is equally delicious! Iron seared porcini crusted Carlton Farms beef medallions. The iron searing over our wood fire gives the loin-medallion a seasoned smoky-porcini crust on the outside and a beautiful tender inside. 

 

Complimenting the steak will be wood oven cheesy cauliflower gratin and "create your own" loaded baked potatoes served family style. 

 

As a perfect steak dinner primer, our french onion soup will be this weeks starting course!

 

It's gonna be a great steak night! (And at $20 per person a GREAT value too!)

Brick Oven Chicken Confit Cassoulet with Smoky Ham Hock, House Made Sausage and Grilled Broccoli

 

Cassoulet is the type of dish that fits Lapellah perfectly. It's comforting, warm and leaves you with a satisfying feeling inside. Especially on cold days like these.

 

 This week we're serving a house-made sausage and ham hock cassoulet with Draper Valley chicken confit and grilled broccoli for Sunday Supper.


Between the wood oven, ham hock, house sausage and beans - the depth of flavor in this cassoulet will be amazing!


Draper Valley Chicken confit and grilled broccoli will be served with the cassoulet. This week's sides will be glazed carrots and Eric's bread sticks along with a chef's choice starter salad.

 This Sunday Lapellah and Reister Farms will bring you Winter comfort food at it's best.

Braised Lamb Penne Pasta with Piquillo Peppers, Arugula and Parmesan + Ribollita Soup

 

This week's Sunday Supper is sure to satisfy with a delicious assortment of Italian-inspired dishes. 

The classic Italian soup Ribollita will be our first course this week. Ribollita literally means "reboiled" and dates back to the Middle Ages. It is composed of day old bread, cannellini beans and winter vegetables. It's a hearty starting course and trust us, it's good. 

The main course will be a braised lamb with piquillo peppers, arugula and parmesan cheese over penne pasta with garlic bread.

A marinated olive salad with shaved fennel and an assortment of wood fire grilled vegetables with white balsamic and sea salt will accompany family style.

Coq Au Vin with Wild Mushroom Bread Pudding and Brick Oven Cauliflower Gratin

 

Coq au vin is a classic French dish that dates back to the mid-1800s. Traditionally, it was made with older roosters, which were tough and needed a wine marinade and hours of simmering to become tender. In the 1960's, Julia Child transformed coq au vin on her TV show "The French Chef" into a simple, amazing chicken dish that took the country by storm! 


This Sunday, we'll be doing Julia proud with 

our version of coq au vin.

 

Supper starts with a wild rice and farro salad with roasted autumn squash. For the main course, we'll make our coq au vin with fresh, all-natural Draper Valley Chicken. The chicken will marinate and simmer in red wine, bacon, garlic and onions to create a rich, velvety red wine sauce. Brick oven cauliflower and a customer favorite - wild mushroom and herb bread pudding - will round out the meal!

Salisbury Steak With Garlic Mashed Potatoes and Steen's Glazed Carrots

 

We're serving an American classic this Sunday for Supper! Salisbury steak was invented in the U.S. in 1897. You know what they say, "Good things stand the test of time"! Salisbury steak is made from minced beef which is shaped like a steak and usually served with brown gravy. We feel like there isn't enough brown gravy in our lives lately. The best Salisbury steak is simmered in the gravy for at least an hour before serving! A classic pairing of garlic mashed potatoes and Steen's Glazed Carrots will round out this weeks Supper entrée.

Rock Shrimp, Chicken and Sausage Jambalaya with Hush Puppies and Collard Greens

 

 

It's getting colder out so this week, we're bringing a slightly heartier Sunday Supper offering. We are digging into Jeremy's recipe book from his time cooking down South and serving up a Creole classic - Jambalaya!

 

Jambalaya was started in the New Orleans French Quarter in the 1800's. It's a rice dish similar to the saffron-infused Spanish paella, but because of the lack of saffron in the new world,
the Lousiana Creoles used tomato. 

 

Our jambalaya is smoky and a touch spicy with rock shrimp, chicken and sausage. We slowly simmer all the ingredients to build a flavorful sauce, add rice and cook until delicious.

 

The salad is a crisp romaine with a creamy onion dressing and croutons. For sides, we're bringing back our hush puppies and rounding out this evening of Southern hospitality with collard greens, a personal favorite!

Shredded Carlton Farms Beef Tacos With House Made Refried Beans And Rice, Guacamole And Salsas

 

 

We're serving a fun, family style Supper this Sunday. We feel slow stewed and shredded Carlton Farms beef served in house-fried crispy shell corn tortillas will make for a satisfying Sunday meal with friends! I mean, who doesn't enjoy a good taco?

 

Served family style - our freshly prepared refried beans, rice, guacamole, tortilla chips and our two special salsas will make this taco spread extra official! Even the sour cream will have our own spin on it!

 

Served with chips, guacamole and a surprise starter, this Sunday's Supper will be muy bueno and easy on the pocketbook! Hope to see you this Sunday!

Starting this week, Sunday Supper will change to a two course family style service for parties of two or more. The first course will be a selected salad and the second course will be a special entree selection. We have also lowered the price to $20 per person. 

 

We feel this is a great way to get back to what Sunday Suppers are all about: joining friends and family around the table, passing plates and enjoying a great meal.

Bacon Wrapped Pork Loin With House Made Applesauce, Brussels Sprouts And Scalloped Potatoes

 

We're starting our new format off with a quintessential Sunday Supper pairing: pork, scalloped potatoes and applesauce. 

 

We're wrapping Carlton Farms pork loin in bacon. Need I say more? Well alright, the pork loin is then cooked on our wood-fired grill to perfection. On the side, we're serving a special house made applesauce to compliment the saltiness of the bacon wrapped pork. The scalloped potatoes add a creamy profile and brick oven brussels sprouts add earthiness and bitters to the mix. All in all a perfectly balanced meal for two (or more).

4 Cheese And Meat Lasagna With Brick Oven Garlic Bread

 

We're dedicating this week's supper to a couple of our favorite Sunday Supper supporters- Edan and Duane! When lasagna's on the menu, they usually show up with full smiles and empty stomachs. We love that!

 

What makes our lasagna so good? The combination of four specially selected cheeses - Ricotta, Pecorino Romano, Parmesan and Fontina - strikes a perfect balance between richness, saltiness, intensity and texture.

What is stromboli you ask? Stromboli is a baked, rolled pastry filled with whatever tasty goodness your heart desires. Think of a cross between a pizza, a calzone and a wrap -- or even a savory turnover.  

 

Lapellah's stromboli is coming bundled in a crisp, house made five-cheese and oregano crust made by our pastry chef Eric. The filling? How about house smoked ham and salami with bubbling hot fontina cheese and earthy oyster mushrooms. Ah, the wonderful world of pit ham! When most people think of pit ham, they think of an old-fashioned boneless-style ham served during Easter Sunday and Christmas Dinner. It's usually pre-carved into thin slices and has an addictive salty/sweet flavor. Here at Lapellah, we're turning it up a notch by brining our pit ham for several days before smoking it, to achieve a great flavor that'll penetrate through the entire cut of meat.We're serving it alongside our wild mushroom and summer onion bread pudding - one of our favorite side dishes - so we hope you are able to come down and enjoy it with a glass of wine on the patio.

The feedback from last month's Harvest Dinner kickoff was overwhelmingly positive. For our second dinner of the year, we're turning it up a notch. Of course, the menu is never released before the day of, but we've been working on some great creations for this month's dinner. There are lots of interesting, organic vegetables that are coming into their peak of ripeness this week at the farm.

 

If you're not familiar with our Harvest Dinner concept, we scout the best produce available from April Joy Farm and design a 5-course farm fresh meal with wine pairings around it. These types of 'supper club' events offer us the freedom to create excellent food, using excellent ingredients for our customers.

For each Harvest Dinner, we team up with April Joy Farmand design a 5-course farm fresh meal with wine pairings.

 

Chef Dave has been scouting the farm all month, and trust us, you won't want to miss out on this Saturday's dinner. Ever had Tonda Di Parigi carrots? Purple kohlrabi? Garlic scapes? Those are just a few of the fun ingredients Chef Dave is using to design Saturday night's menu.

This Sunday, bring dad in for a hearty plate any father would love! Our Veal short ribs are braised until extremely tender and served with a delicious sauce made with the reduced pan juices. Summer Vegetable Rabbit Stew With Hand Formed Strozzapreti Pasta

  This Sunday Supper is a dish we've never done at Lapellah, Rabbit stew. Rabbit is a rarity on menus around the Portland area so we're proud to offer it for one night only.  

 

We're matching our rabbit with some lovely Summer Vegetables and hand formed fresh Strozzapreti Pasta. Strozzapreti translates from Italian to "priest choker". There are many myths about how the name came about, but I like this precautionary tale the best.  

 

"Another explanation involves the housewife who "chokes" the dough strips to make the strozzapreti. In that particular moment you would presume that the housewife would express such a rage (perhaps triggered by the misery and difficulties of her life) to be able to strangle a priest!"

The word Sugo, literally translated from Italian means sauce or juice. 

 

In kitchens, sugo refers to a rich sauce achieved by forming layers of flavor using the process of brown, release, reduce, repeat with your ingredients over a long period of time. 

 

As Paul Bertolli wrote in his book Cooking by Hand"The degree of depth of flavor, color and texture in sugo is directly related to the extent to which the meat is browned and the amount of residue that develops at the bottom of the pot." 

 

This Sunday, we'll be slowly developing our wild boar sugo for hours to ensure a rich, unforgettable sauce you won't forget. Our boar sugo with porcini mushrooms and rigatoni pasta will lend a complex flavor and ensure maximum goodness in every bite.

Lapellah's Wood Fire Rotisserie BBQ Chicken with Spring Collard Greens & Loaded Baked Potato

 

This dish premiered on our first menu - ever! - and highlights our signature cooking style at the restaurant: cooking with fire. Cooking with fire is difficult because you must constantly tend to it, making sure that the flames are evenly distributed - or as evenly as humanly possible! That's also the beauty of this style of cooking - it's primal, unpredictable and imparts a rustic, smokey flavor that is unbeatable.   

 

How we do it? We brine our birds overnight, which enhances the juiciness and ensures that they're moist and delicious. The chicken is then rotisserie roasted and smoked over our wood fire, and smothered in our signature BBQ sauce. It's served hot, juices still intact, with spring collard greens and a loaded baked potato. If you haven't had a loaded baked potato before, you'll have to come on in for supper. Trust us, you won't regret it.

This Sunday, we're presenting a classic comfort food for supper! I remember the smell of my Mom's pot roast cooking slowly all day until it was finally dinner time when my Dad returned home from work. The tender beef with it's flavorful natural jus, potatoes & carrots. Pot roast done right is simply a wonderful meal for the senses and the soul.
